Panzanella has got to be one of my favorite summertime dishes. I make a variation on this from a recipe I got from cooking light – toasted pieces of a baguette topped with a mixture of tomatoes, red onion, cucumber, basil, basalmic vinegar and olive oil and a piece of cold poached salmon. It’s ridiculously easy and tastes amazing.
