Congrats on getting all the photos and recipes done. That must have been a major undertaking. You should be proud of that huge accomplishment.

And don’t fret over not including the coconut shrimp recipe in this book. Just means there’s more good stuff for the cookbook sequel.

I tried this recipe last night. And everyone loved it! I love the panko breadcrumbs and coconut together — wonderful texture. My 4 year-old daughter loves shrimp and proceeded to consume as many as her little mouth could fit. Let’s just say that I will not be introducing her to lobster anytime soon. My 6 year-old son is more picky but he couldn’t stop eating them. I was lucky to even get any shrimp!
