Fried Egg with Oyster Sauce & Chili
from Simple Chinese Cooking by Kylie Kwong
4 free range eggs
2 tbls oyster sauce + 1 tbl water, mixed
pinch ground pepper
1/2 cup finely chopped scallions
1-2 chilies, finely sliced
3 tbl cooking oil
Carefully crack eggs into a bowl. Heat oil in wok on high heat until surface seems to shimmer slightly. Pour eggs into hot oil. After 1 minute, reduce heat to medium, allowng the underside of the egg to become firm and crisp. The yolks should still be runny at this point. Cook 1 more minute. Gently slide eggs off plate, trying to keep excess oil in wok. Drizzle eggs with oyster sauce. Season with pepper. Garnish with chili and scallions. Serve immediately.

That’s how I eat my eggs, be it scrambled, easy over, or sunny-side up. Oyster sauce over all. When in college many moons ago, I used to bring my bottle of oyster sauce down to the cafeteria at breakfast!

whee, i love eating this. my mom used to make it for me all the time when i was growing up. sans the chili b/c i am weaksauce when it comes to spice. quick related question — i always thought this was a cantonese thing. is it also a general chinese way to eat eggs?

Mine is gentle sunny-side-up or half-boiled - with a dash of soya sauce and a twist of freshly ground white pepper. (If I’m hardworking - with stirfried shallots, too.) Gotta try your oyster sauce suggestion!

It has to be the Lee Kum Kee bottle with the woman and son in the boat with the lotus flower on the label. The premium stuff. I love this stuff, and hubby can’t wrap his taste buds around it. He’s got no problems with chili and tobasco on his eggs. I also use Sirachi sauce on my eggs. My kid is an egg purist, we leave them plain with salt only green food dye allowed. I’m gonna mess with him this weekend and inject food coloring in his hard boiled eggs. Oh wait, maybe I’ll wait until St Patrick’s day or April fool’s day.

I also was up at 3am this morning eating and I’ve been eating fried eggs all week after months of not having any (and I’m pretty sure undercooked yolks are a pregnancy no-no, oh well)… is this a phase of the moon we’re in or something? I can’t wait to try them this way- makes insomnia seem not so bad!
BTW, love the haikus and I can’t think of anyone else that could take such a beautiful picture of the remains of fabulously runny eggs.

I usually do this dish with soy sauce and some rice to soak up the yolk with. Will have to try the oyster sauce too!
