Outside of our kitchen and camera, the number one business tool that we use is Adobe Creative Cloud Photography. Lightroom and Photoshop are always open, and I seamlessly transition between the two programs to manage digital assets (Lightroom) and edit or create graphic images (Photoshop).

I’ve been a long time user of Adobe products, I think since their early 90’s! Prior to the monthly subscription of Creative Cloud, users had to purchase the software full price, and then purchase upgrades to stay current. It was always too expensive for me to buy on my own, so every job I went to, I would convince my managers that Adobe products were needed to do my job in marketing.

These days, using Adobe is so much more affordable! A monthly subscription to Adobe Creative Cloud gets you access to their programs AND all the software updates.

We use the Creative Cloud Photography plan at $9.99 per month. It not only is essential to our business, but also for our personal photography and video, too. Being able to catalog, organize and do basic photography editing in Lightroom has given structure to the tens of thousands of photos we take each year – between the iPhone, iPad, computer and dSLR camera.

All the video shot from the iPhone also gets organized and tagged. So, if I ever wanted to find Andrew playing tuba in 6th grade video, all I would have to do is search “tuba” — and up pops all of the digital assets.

I use Photoshop for adding text to photos, detailed editing of photos or designing a cool collage for Pinterest!

Creative Cloud Photography includes not only Lightroom and Photoshop for the desktop, but also Photoshop Mix and Lightroom for your iPad or iPhone. I haven’t tried using Adobe on my mobile devices yet, but we’ll have fun exploring the possibilities.

The Bella Stir Stick Popcorn Maker gave us a break from the nasty chemicals found in our microwaveable popcorn! We never looked at the label before, thinking, “popcorn can’t be that bad!”

Here’s what we found on the label of our Pop Secret Microwaveable Popcorn: Partially Hydrogenated Soybean Oil, Natural & Artificial Flavor, Color Added, Propyl Gallate.

Propyl Gallate is a man-made substance used to prevent oil from going bad. If you do a little research, you’ll never buy products with Propyl Gallate ever again!

The alternative? Pop your own corn.

We tried out the Bella Stir Stick Popcorn Maker for family movie night (X-Men FTW!) Our local farmstand carries the Amish Country Popcorn, and we bought the Baby White Popcorn kernals. One batch, we seasoned with regular salt for the kids. And the other was for me, seasoned with Japanese Furikake!

Furikake is a Japanese seasoning that you normally sprinkle on top of rice. Each blend is different, but it contains things like bonito fish flakes, seaweed, sesame seeds, dried salmon flakes and powdered miso. I love it on french fries and popcorn.

The Bella Stir Stick Popcorn Maker performed well, I like that the top dome doubles as a serving bowl. The motorized stirring rods ensures even popping of the kernals. We used very little oil, and it was pretty fun for the kids to watch the popcorn come to life. We also place a little container of butter on top of the dome to melt.

Pros: Simple to use, all natural ingredients, no chemicals. 6 quart capacity (huge!)

Cons: It’s a giant appliance! Hard to find room to store. After popping, you need to carefully grasp each side of the popcorn maker and flip it. It was hot! Oven mitts required, Bulky oven mitts made it difficult to grasp the little handles.

Philips AirFryer Review

We have a deep fryer that’s been sitting unused for three years. It used to get lots of action, homemade french fries, homemade potato chips, crispy egg rolls. But these days, the only thing I deep fry is the egg rolls – and it’s easier for me to deep fry those in a wok than it is in the machine.

For the past 5 years, we’ve used the T-Fal ActiFry, which uses hot air, rotating paddle and minimal oil (1 tablespoon for 2 pounds of potatoes) to cook healthier fries, chips, wings and even Brussels sprouts!

phillips-airfryer-review-2Philips sent an AirFryer, which is similar in concept, for us to review. How does it stack up against the ActiFry?

The AirFyer is beautifully designed, sits upright and shaped like a coffeemaker with a pot belly. I like it’s smaller counter footprint, making it easier to store in the pantry and taking up less space on the counter. Plus, it’s not bad looking if you keep it on the counter – nice and sleek design.

While the ActiFry has a moving paddle to stir and move the food around, the AirFryer does not. If you have more than one layer of food (like fries) in the AirFryer basket, you need to open and pull out the basket, give it a good shake or stir several times during cooking.

However – because the Actifry’s paddle continuously rotates (there’s no way to stop the rotation), it’s only good for food that can withstand constant motion (like fries, shrimp, wings). Not good for a whole chicken, frittata or rack of lamb. This is where the AirFryer shines. Roasting a whole chicken is easy – just plop the bird into the basket and set the timer.

One thing that is difficult for BOTH machines – adapting recipes or package instructions (if you use frozen foods) to cook in these appliances. It’s trial and error – food cooks much faster in circulating hot air than in the oven.

My Mom also took the AirFryer for a spin. She purchased some small fish fillet, brushed the fish with just a tiny bit of cooking oil. Normally, she would pan fry the fish, in batches on the stove.

The AirFryer performed beautifully. Crispy skin. Minimal mess (basket goes in the dishwasher) and no greasy splatter on her stovetop. So much healthier than deep frying or pan frying!

The controls on the AirFryer are easy to use – just the basic settings for temperature and time. My ActiFry was a pain in the butt to adjust – only one temperature setting and one button for timer (no up/down, so you had to scroll through the numbers if you missed your target).

The AirFryer can bake as well, though we haven’t tried this yet. Philips has three recipe booklets that feature American favorites, Asian specialities and Indian recipes.

While the promotional video from Philips shows cooking steak and shrimp in the AirFyer, I find that steak is easier to cook and tastes better on my cast iron pan (or BBQ grill) — and the shrimp is easier to control/prevent overcooking in on my stove. Unlike the ActiFry, the AirFyer lacks a transparent window to monitor your food.

I suggest using the AirFryer for food items like whole chicken (cooking time based on weight of chicken), traditional fried stuff (nuggets, fries) or baked items (turnovers, Char Siu Roast Pork — see below). Our next test will be Mom’s Crispy Spring Rolls.

Coincidentally, I was at the HSN offices two weeks ago, and sat down for an hour with one of the executives in charge of product and talent. We talked about both units (they have sold both on their show) and I raved about the AirFyer.

ActiFry or AirFyer? AirFyer wins for more evenly cooked food, larger variety of recipes that you can make, smaller counter footprint and ease of use. ~Jaden

1.25 pounds pork butt, cut into 2″ strips
4 cloves garlic, finely chopped
1 tablespoon cooking oil

Char Siu Marinade/Sauce
2 tablespoon maltose (or corn syrup)
1 teaspoon baking soda
3 tablespoon sugar
4 tablespoons hoisin sauce
3 tablespoon soy sauce
2 tablespoon Chinese rice wine
2-4 drops red food coloring (optional)
1 teaspoon five-spice powder
4 teaspoon sesame oil

1. In a small saucepan, add all of the marinade ingredients and whisk on medium-low heat until sugars has dissolved. Let cool completely. Reserve half of the marinade for cooking.

2. In a gallon-sized resealable bag, marinate the pork with the other half of the cooled marinade, along with the garlic for at least 8 hours in the refrigerator.

3. Preheat the AirFryer to 390F for about 5 minutes. Drain the char siu and discard the marinade. Pat dry and brush on the cooking oil. Place the pork in the AirFryer basket. Set timer for 10 minutes. Roast the char siu until golden reddish brown. During cooking, brush the reserved, unused marinade/sauce onto the char siu.

4. Lower the temperature to 320F and roast the char siu until perfectly charred.

OXO Greensaver Container 3Fruits and vegetables are the largest part of our grocery budget, especially during the summer months when our garden is down (way too hot in Florida to grow anything!) However, fruits and vegetables are the most wasted foods in our house as well.

They just go bad too fast. We’ve tried sprays, drawer inserts to keep the produce fresher, but really couldn’t tell a big difference in its use.

Oxo just launched their GreenSaver products. We love them. Here’s why:

1) The Produce Keeper, which is a non-toxic activated carbon filter that absorbs the ethylene gas to slow down spoiling, is contained INSIDE the lid. This makes it more effective, trapping as much gas as possible in a smaller space. The refrigerator drawer inserts that we were using, were not as effective. The same size filter, trying to work an entire vegetable drawer.

2) The Basket keeps the produce dry. You can use the basket and the container as a colander to wash and rinse your vegetables, then add the lid to refrigerate. This saves time and washing of an extra colander. Such a smart design. The basket also lets the produce have airflow all around, not just on the top.

3) All of Oxo’s products are very well made. Sturdy, thick plastic, yet lightweight. The 3 sizes we got are the perfect size – the smaller one for soft fruits (berries), the larger ones for vegetables. We use the largest size for kale. We buy kale in large bags, and add handfuls of kale leaves for smoothies. We used to keep the kale in the same bag we purchased, but the kale would rot at the bottom of the bag. With the Oxo GreenSaver, our kale lasts us 3 weeks with no spoilage.

4) Carbon filter lasts for 90 days, and are inexpensive to replace. A few times, I’ve forgotten to remove the carbon filter prior to throwing into the dishwasher. I wonder how that affects the filter.

5) Use this outside of the refrigerator. Some produce, like tomatoes, are not refrigerated. We love to use the GreenSaver on the counter for these items. They have prolonged the life of my tomatoes! We also don’t like refrigerating strawberries – the GreenSaver comes to the rescue and gives us an extra 3 days. Just this alone has saved us so much money.

My Mom is the ultimate tester for this Tiger rice cooker – she cooks rice at least three times a week! Her current rice cooker is nearly 10 years old, so I let her take this one for a spin. Will the Tiger JBA-T10U Rice Cooker pass the Asian mom test?

The cooker is the perfect size for 2-6 people. It’s small enough to store in your pantry, yet has the capacity to cook 5 1/2 cups of raw rice. Asian rice cookers are designed very similarly, with a handle for carrying/moving the cooker around, a capsule-shape body and a one-button push for opening lid. American-style rice cookers are more “pot-like”, requiring you to lift the lid off and finding a place to put the lid, which is dripping with moisture. Tiger’s one-button open keeps the lid attached, and any liquid condensation drips back in, keeping your counters clean.

This rice cooker is computer-controlled, with their Automatic Cooking Logic™, which keeps track of weight, moisture and temperature, so that your rice is never burnt, and always perfectly cooked.

We love the thick inner pot, it’s sturdy and keeps the rice cooking evenly.

There are lots of other features too, with 9 preset cooking methods, including slow cooking, steaming, brown rice and multi-grain rice. My Mom was especially excited about the slow cooking capabilities. The pot size is perfect for slow-cooking a meal or soup.

She also tried steaming in the rice cooker, using the steamer insert. It worked just fine, but she wishes that the steamer insert had a little handle, or a notch so that it was easier to lift off and out of the inner pot without burning her fingers, The steamer insert fit very snugly, and there is no good way to lift the pot off.

Like all Asian rice cookers, the Tiger JBA-T10U comes with a rice paddle and a measuring cup. Take note that Asian rice measuring cups are NOT the same as a standard measuring cup. 1 cup of raw rice using the provided cup is about equal to 3/4 cup. Or, you could ditch the cup altogether and use the “finger-method” of measuring rice/water.

Mom’s verdict? She loves this rice cooker and gives her “Asian Mom Seal of Approval” :-)

I’ve always been a big fan of Tiger products. Tiger is known for their very high quality small appliances made in Japan. Our family has used Tiger products for as long as I can remember – we used to have their Hot Water Heater on our counters for hot tea during the winters. If you like Shabu-Shabu or Chinese hot pot meals, check out their electric pans. We use one similarly designed (but not Tiger brand) for our family hot pots.

One of my secret weapon ingredients in the kitchen is just salt. Salt seems like such a simple ingredient, but the salt that I’m talking about is pure, all-natural finishing salt. A three-finger pinch is all that’s needed to finish a dish, right before serving.

I normally use easier-to-find brand called Malden (you can find it at Sur La Table, Williams Sonoma, Whole Foods, and other high end grocery stores). I love their pyramid-shaped salt flakes, which are so thin, they literally melt in your mouth.

We recently tried Falksalt, from Sweden. Like Malden, Falksalt’s crystals are flakey, pyramid shaped. But the similarities end there. Falksalt’s crystals are harder, more clear (my husband said they look like uncut diamonds), and are shatteringly crunchy-crisp, which provides a beautiful textural experience in each bite.

Falksalt harvests seawater from the Mediterranean, and its facilities in Cyprus, Greece, evaporate the seawater until there is nothing left but salt. “…Experienced salt makers heat up the sea water and let it evaporate until the delicate pyramid shaped crystal flakes appear. The salt is then harvested, dried, sieved and finally packed, all by hand.”

falksalt3Your fingertips act as the salt grinder. Just take a three-finger pinch of salt, rub and squeeze the salt pyramids and they’ll break apart.

I love that Falksalt creates different flavors, including Rosemary, Red Chili and Smoke.

Smoke is great on anything, but especially roasted vegetables. Anytime you need to add a hint of subtle smoke flavor, a pinch of Falksalt goes a long ways.

We also tried the Black salt – not my favorite of their selections, as the black isn’t a particular flavor, but made for visual appeal. Crushing the black salt on a white plate was visually striking.

Citron was lovely on grilled fish. We also liked crushing it and using the Citron to rim our margarita glasses.

Our dehydrator gets used twice a month, but only for one thing. Beef jerky (check out our recipe for Korean BBQ Beef Jerky).  The snack of choice in our house is fruit or jerky. Both are easy to eat, easy to transport in my bag and also healthy.

nesco dehydratorOur $80 Nesco dehydrator is something we bought a couple of years ago, thinking that all dehydrators are the same. Trays + hot air. I was proven wrong when we tested out the Excalibur Dehydrator. But, at a price difference of over $100, is the Excalibur worth it?

We made several batches of beef jerky to find out.

Oops, well, first, we had to get the Excalibur unit replaced. The one sent did not work correctly – the fan was fine, but there was no heat. We called their customer service, left a message. The next day, we didn’t hear back, so I called again. This time I got a live person, who was very apologetic and friendly. She took care of our problem right away, and sent us a replacement unit. She offered 3-day shipment for our troubles.

As promised, a new unit arrived. We packed up the defective unit (it was the fuse) and shipped it back to Excalibur, postage taken care of.

The Excalibur’s fan/heating element is mounted on the back of the unit. The Nesco’s fan/heating is in the lid itself, which sits on top of all of the trays.

The Excalibur has a door that hangs loosely, making it very convenient to open, insert/remove trays.

These two things makes the Excalibur superior – the fan/heater are still working and drying the food, even if you are rearranging the trays. I can do this with one clean hand. With the Nesco, you have to lift and remove the lid/fan/heater off the trays first. Rearranging the trays requires two clean hands (normally, if I’m dehydrating beef jerky, one hand is touching raw meat).

The Excalibur includes mesh for each tray. The food lays on top of the mesh. This makes it so easy to clean, just pop the mesh in the dishwasher. The plastic trays just need a little soapy water to clean.

The Nesco only comes with 2 mesh trays. Their round rack is very difficult to clean, and too tall for dishwasher to fit in all 5 trays at once. Food sticks to the plastic tray, and you need to soak them in hot, soapy water before the food particles scrub off.

Both units have different temperature settings. But the Excalibur also has a timer that you can set. Nesco does not have a timer.

Quick time-out to show you how we make Chinese Char Siu Beef Jerky. We have a meat/deli slicer by Kalorik that use to get the exact thickness of beef that we like. London Broil is our meat of choice, as it is nice and lean, and the perfect shape for slicing for jerky.

We use prepared Char Siu (Chinese BBQ) sauce, thin it out with just a bit of water. Marinate the sliced beef for 15 minutes, then lay on the trays to dehydrate.

We love our jerky sliced thin, so that it’s almost like the texture of crispy chips.

Another plus for the Excalibur – the trays are rectangular (Nesco is round with a hole in the middle). For making beef jerky, this makes it so much easier to lay and arrange the beef. Previously, with the Nesco, we were having difficulty arranging long, thin rectangles of beef on a donut-shaped tray. We were able to fit much more jerky on the Excalibur.

The Excalibur is big. You’ll need more storage space for the unit. Performance-wise, they are about the same. Beef jerky dried just as well in both units, and in nearly same amount of time, despite different wattages.

Is the extra $124 worth the price for an Excalibur? For our purposes, yes. We use our dehydrator constantly, and I like the 10-year warranty. Plus, the shape and size of the trays make it easy for beef jerky. The cleanup is so simple – the mesh goes into the dishwasher and then just a few minutes washing the trays. The Nesco used to take us at least 20 minutes of hand-scrubbing to clean each plastic tray to remove the bits of beef jerky stuck to the plastic.

If you are only using the dehydrator a couple times a year, then I would advise the cheaper Nesco.  It’s easier to store, saves $120 and dehydrates just as well as the Excalibur.
