Cappec Bluetooth Thermometer Review

There’s a new crop of bluetooth enabled kitchen thermometers flooding the market. The Cappec Bluetooth BBQ Thermometer (model NS-BTH01) is one of the most inexpensive bluetooth thermometers that you can find, latest price on Amazon is $49.95.

It’s a simple thermometer to operate – the Cappec NS-BTH01 does one thing – measure temperature. This is a good thing, as I’ve tested a couple other bluetooth thermometers that had so many buttons, knobs and features that I needed to sit down and study the gadget and the manual.

Power the unit on. Download the app, and it connects seamlessly. The app, like the thermometer itself, is simple. No fancy options, just configure desired temperature and it gets to work.

There are 2 sensors, each works independently. Use one or both. Set the temperature using the app or the unit itself. You can choose a temperature based on USDA guidelines, or program your own. I never use the USDA guidelines – those temperatures (government CYA numbers) always results in overcooked meat, so I always set the temps a few degrees lower.

You can use the Cappec Bluetooth Thermometer in the kitchen, in your BBQ grill or in your smoker. Cappec also provided 2 clips (sold separately) so that I can use one of the probes to measure ambient temperature in the grill or oven.

The two probes allow you to monitor temperature of 2 different meats or dishes — or use one for a meat and the other with the clip to monitor the temps inside the grill. This is extremely important, whether you use charcoal, propane or wood pellet grill. A couple of times during cooking, we’ve run out of wood pellets in our chute, and we didn’t know it until one of wondered why the food was taking so long to cook!

A note to those who aren’t used to these types of thermometers – while the probes are heat safe, the plastic display device is not – so keep this on the outside of your oven or BBQ.

Conclusion: Very good value for a bluetooth thermometer. It has a 12-month warranty. Easy to operate, no glitches during installation, though installing the battery with this tiny, microscopic screwdriver (included) will be hard for people with fat fingers and bad eyesight (like me). No fancy bells or whistles, no recipes. Easy to read, app is easy to understand. Good for people not great with technology but want to dip their toe into connected devices. Many people shy away from cooking ribs at home, which is one of the reasons why BBQ joints are so popular, leaving the tender, smoked ribs to the pros to handle.

Good ribs are not hard to make at home. In fact, it’s one of the easiest meats to cook. No carving, no turning, no constant basting, and no need to be diligent about taking the temperature.

We make a lot of ribs:

So, what’s the formula for restaurant-quality ribs on the grill? The Ribalizer is a rack that sits on top of regular, disposable aluminum foil pans (no mess!) The rack keeps the ribs upright, so that you can fit up to 6 racks. Perfectly cooked ribs are ready to eat in 2 hours.

Here’s the simple Ribalizer formula:

 

 

Formula To Perfect BBQ Ribs

We gave the Ribalizer a trial run this past weekend. Since it was just Scott, myself and the boys, we only needed 1 rack of baby back ribs, cut in half.

To the bottom of the pan, we added beer. You can use cola, apple juice (Dr. BBQ loves using apple juice) or even water.

After 45 minutes, uncovered, cover with second pan and cook another 1 hour 15 minutes.

The resulting ribs were tender (because of the steam provided by the beer), smoky (from the grill) and really easy to cook.

There’s one more step that I would add to the “best ribs ever”. For Scott and the boys, they love the sticky, sweet BBQ sauce slathered on top, with the sugar of the sauce caramelized just a bit (I prefer naked ribs with rub only).

Conclusion

Pros: This cooking technique works really well. The ribs were perfectly cooked, and in 2 hours, instead of the usual 4 hours. Previously, to get this kind of tenderness, we had to use massive sheets of heavy duty tin foil, fold it around the ribs and pour in apple juice without spilling. The Ribalizer made this process easy. I like the disposable, standard sized aluminum pans that you can buy at many stores. It keeps the cleanup easy. We oiled the Ribalizer prior to using, so a light scrubbing cleaned the metal rack. It’s also dishwasher safe, but if you wait too long before washing, it’s more difficult to get the bits off. I loved that the racks kept each rib rack upright and separate. This allows the smoke and flavor to touch every nook and cranny of each rib.

Cons: This really is for cooking lots of ribs. Because the pan is so large, we needed 2 bottles of beer to keep the liquid at the right level. If you run out of liquid, you’ll ruin your entire batch – the meat will taste burnt. Two bottles of beer to cook the little ribs we had was a little wasteful. While Ribalizer has a strong, heavy-duty metal support that goes around the edge of the pan, there is no support for the bottom of the flimsy, aluminum pan. This makes it nearly impossible (and dangerous) to lift the pan to and from the grill. You need to have an empty pan to transport. Having some bottom support would make the Ribalizer so much easier to use and prevent any accidents of steaming hot liquid + hot ribs spilling.

Conclusion: If you love ribs, and want an award-winning quality, the Ribalizer is an inexpensive way to make you the BBQ hero amongst your family and friends. It’s perfect for parties, for cooking lots of ribs. But if your rib-cooking is just for 2 people or a small family, it’s probably not the most efficient way. While using the Ribalizer – there are 2 very important things to keep in mind: 1) Don’t run out of liquid 2) Don’t lift the pan with ribs and liquid inside. Neglect either one of these things, and you’ll ruin your dinner.

To get truly “smoked” flavor on a gas grill, you’ll also some soaked wood chips to put in the grill or a this neat smoker gadget. To cheat, add a tiny amount of liquid smoke (found at any grocery store, next to the BBQ sauces) to the bottom of the pan. GrillGrates are interlocking grate panels that sit right on top of your own grill grates. The raised rail design is a drastic improvement to the standard grates that come with your BBQ grill, preventing flare-ups from dripping fat and provides more even heating.

How GrillGrates Work

According to GrillGrates, the grate radiates heat, magnifying the heat to your food. Normally, in regular grilling, the flames at the bottom of your grill directly heat your food. With the GrillGrates in between your food and the flame, the fire heats up the grates, and in turn, the grates provide even, hot, infrared heat that cooks your food.

This design also prevents flare-ups. Dripping fat from your food that falls onto the flames causes an intense surge of fire that burns and chars your food. Most people will keep a cup of water or spray bottle to tame the flare-ups.

The GrillGrates on the right prevent the drippings from reaching the flames. In fact, the drippings and juices fall on the valley of the GrillGrates, sizzle and vaporize as moisture to further flavor the food.

GrillGrates Test

This past weekend, we took the GrillGrates for a test drive on our Memphis Wood Pellet Grill, with grass-fed beef burgers (Sauté sweet Maui onions in a pan until caramelized, then chop finely. Season ground beef with salt/pepper, mix in the chopped onions, form into patties).

Grass-fed beef can be a little tricky to grill, they cook much faster than the regular beef, so the window of “perfect burger temperature” is much smaller. This would be a great test for the GrillGrates.

GrillGrates Installation

The GrillGrates locked together easily. I like that it sits on top of my regular grates, so that I didn’t have to remove them at all. Removing the GrillGrates was easy, too, just lift them off the grill.

The GrillGrates come with a special pronged spatula that looks like a fork! This allows the spatula to go in between the grates to lift your food, and not scrape the food. This is important when grilling delicate foods like fish or vegetables. For our delicate burgers, it meant easy lifting and flipping without the burgers falling apart.

We watched the fat from the burgers drip down to the valley of the GrillGrates, but with no flare-ups. The burgers cooked fast – we shaved about 30% off the cooking time! Normally, we cook the burgers at a high temperature to get the sear, then lower the temperature to cook the rest of the way without burning the surface. Since we have a wood pellet grill, it works a little differently than your regular charcoal or gas grill – we control our grill based on a temperature gauge, which then allows the grill to regulate the amount of wood pellets that enter into the chamber.

Measuring the heat above the GrillGrates vs the area without, we saw an increase of 18% higher temperature. (We used a laser thermometer to measure the temperature).

The grass-fed burgers were juicy, perfectly cooked (even pink throughout burger) and no burnt spots.

Final Thoughts

Pros: We grill a lot of vegetables, and most of the time, we are too lazy to use a basket or skewers on the grill. But the problem is that smaller pieces fall through the grill and gets lost in the fire. Because of the GrillGrate design, the vegetables don’t fall through. Just use the pronged spatula to lift up and out. The GrillGrates did in fact, increase the temperature of the grill, and the infrared cooking improves upon the evenness of the heat. We normally don’t get many flare-ups anyways with our Memphis Grill, but I can definitely see the benefits if using a charcoal or gas grill.  No flare-ups means no burnt fat. I love that it’s made in the USA. Its hard-anodized material does not rust. We also use a lot of marinades in our chicken and pork grilling – brushing on high-sugar marinades used to be a problem – we used to get burnt areas where the marinade would drip down into the fire. The GrillGrates prevents this – and actually the dripping marinade sizzles and evaporates, providing more flavor to the food.

Cons: The grates are a little too far apart in my opinion – I wish they were just a bit more narrow. While delicate fish and vegetables won’t fall into the flames, they do fall into the valleys of the GrillGrates. It’s an easy lift to get them back onto the rails, but less space between the rails would work much better. A standard grill brush cleans the top of the GrillGrates. But if you really wanted to clean in between the rails, or scrub to remove any charred bits, it is more difficult.

Our aquaponics garden runs year-round (the fish don’t take summer vacations) and our raised bed is open for business Fall, Winter and Spring. Our intense Florida heat forces a shut down of our beds, and I don’t much enjoy being outside tending to the garden while sweating like a pig!

With so much produce, I like to either dehydrate or cook/freeze our vegetables. We’ve canned a handful of times, but found the process too cumbersome to do regularly in the old kitchen. Plus, that time I slipped and spilled 4 gallons of hot water in the kitchen? Not fun.

I took the Ball’s brand new product, the Electric Water Bath Canner & Multi-Cooker for a test last week. I made a big batch of Marcella Hazan’s Tomato Sauce with Onion & Butter to gift to a friend.

First off, this electric unit is more than just a canner, it also can simmer soups, cook marinara sauce or serve warm cider for a party (a BIG party!) Because it’s an electric appliance, your stovetop is free to do other things. This is great for potlucks, churches or organizations serving dozens of people. Note that the Multi-Cooker is big! It holds 21 quarts of water, enough to process 7 quart jars, 8 pint jars or 12 half-pint jars at one time.

The FreshTech Electric Canner makes canning for a novice easy and safe. I didn’t have to measure temperature manually, there is a dial that adjusts the heat setting from pre-heating jars to processing the canning.

We set the unit right next to the sink, so that our sink hose could reach in and fill up the pot.

There’s also a very convenient spigot to drain back into the sink (no more spilling gallons of water in the kitchen!) Inside the unit, is a stopper, so that you can cover the spigot when using the unit as a Multi-Cooker. You wouldn’t want to get food stuck in the spigot. Remove the stopper to drain the water – or if you’re serving Hot Buttered Apple Cider with Rum.

Also included in the package is a steaming rack, which is perfect for steaming a whole fish, Chinese style.  Another great feature is that the unit lifts up and out from the detachable base – so that it is easy to clean and carry. The glass lid was nice – you can just peer in to see what’s going on in the pot. Silicone handles meant no more fussing about with clumsy pot holders.

The Ball Electric Water Bath Canner and Multi-Cooker came with a few recipes, but I highly suggest checking out my friend, Marisa’s blog, Food in Jars (she also has 2 cookbooks that are great too.) Read up on her Canning 101 series of posts to learn all about jars and canning.

As a novice canner, I do like this appliance. The price is high, at $149.00, but if you are using it as a Multi-Cooker for big potlucks are parties, then it is absolutely worth the money. For the occasional canner, it is expensive and big – you’ll have to find a place to store this baby when not in use.

Black Canyon Personalized Cutting Board Review

We own a good dozen of cutting boards – each a different size and shape and made of different types of materials. Our go-to board that is always out on our counter has been a sturdy walnut end-grain board that we had made years ago. But without a trough to catch juices or drippings, we only used it for chopping vegetables.

Black Canyon Woodworks from Bend, Oregon, sent me a gift certificate to use on their site, and I immediately chose the large platter-style cutting board with a deep trough, perfect for carving chicken, turkey, prime rib or anything juicy for that matter.

I loved customizing my perfect cutting board – you can choose from 1 of three styles:

Cherry Packaged Cutting Board

Each cutting board is hand crafted and packaged with an oil that’s specifically designed to take care of your cutting board, so that it will last for years to come.

The platter shape is my favorite – I love the handles to help with easier transport of food. The other side of the cutting board is flat (no trough) and is perfect for your everyday chopping. The thickness is 1.25″ – which is perfect thickness for me. The standard 1″ thick is a little too thin – and warps too easily over time. This Black Canyon Platter style cutting board at 1.25″ feels so strong.

A few people asked about the Butcher style cutting board – the design of that board is “end grain” meaning small pieces of wood are joined together, with the end grain up. These end-grain boards are very sturdy and actually are better for your chef’s knives because of the “give” in the grain when you chop. They keep the knives sharper as well. The reason I’m not a fan of the very thick 2.5″ cutting board is because I’m short! That extra 1.25″ in height means I’m chopping at a weird angle. However, if you’re lucky enough to be taller than me (I’m barely 5 ft 2″) – I would highly recommend the Black Canyon Woodworks Butcher style personalized cutting board. Cons: It is heavy, more difficult to carry, and you only get 12″ x 12″ square.

Review:
We use several different types of pans for cooking:  cast iron, nonstick and hard anodized. Oh, and also our outdoor grill! To make sure we don’t scratch our nonstick cookware, we have been using silicon or plastic tipped tongs. The problem with this is that I’ve had several melt in the cast iron pans and on the BBQ grill.
I’ve also ruined 2 pairs while cutting with a sharp chef’s knife too. To further explain – after grilling the chicken breast, I’ll use the tongs to bring them to the cutting board. The chicken is too hot to handle with my bare hands, so I use the tons to steady and anchor the chicken while I cut the meat into strips.  Well, I didn’t move the tongs back far enough and it got nicked in the knife’s edge!

Smoothies and Ice: Absolutely no difference in texture or smoothness of the smoothie. The Pasternak blender performed flawlessly, in the same amount of time as the Vitamix. I do wish the Pasternak blender container was wider and shorter, it was difficult to scrape out every little bit of smoothie with a rubber spatula. My current pitcher that I use for the Vitamix is the short, squat version, which makes it easier to clean. The Pasternak blender pitcher is not as sturdy as the Vitamix pitcher. But, performance-wise, they both were excellent.

Soups: I make a lot of soups, which is why I bought the Vitamix that included the hot soup function. I was surprised that the Pasternak blender could do the same. I tested a batch of soup using leftover, cold, roasted cauliflower – hoping to make a creamy, no-dairy soup. The Vitamix produced the hot, creamy soup faster than theHarley Pasternak blender, but the difference was minor, less than 30 seconds difference. I do like having a “hot soup” setting on the Vitamix (on the Pasternak blender, you just have to stop the blender, check to see if the soup is hot.)

One of the very first cooking appliances my Mom gave me years ago was a portable oven just like this one. She instructed me to use it when I needed to cook a turkey, chicken, ham, roast — basically any type of meat that you’d normally roast or bake.

I used it faithfully, until the dreadful day that it broke, from overuse. What I love about the oven is that it freed up my big wall-oven to do other things AND it didn’t use as much energy.

Robert Irvine and company sent me this amazing Halogen Oven to try out a few weeks ago. We’ve used it four times already to roast chicken for family dinner! The halogen lamps ensures the most efficient cooking with convection heat. There’s also a built in timer to ensure you don’t over cook your food (timer turns the oven off.)

Rollie Review

We get 8-9 fresh eggs a day from our laying hens – that’s a lot of omelets for our family! Dorm Co, a retailer for all nifty things for college life,  contacted us  and offered any product from their online store.

We chose the Rollie.

Not because we needed an “easy way to cook eggs” – but purely for the fun factor.
