Mexican Street Corn (Elote) in the Microwave
Elote, aka Mexican street corn will be your new go-to side dish. Elote is traditionally made with corn on the cob, but I'm going to show you how easy it is to make this in just a few minutes in the microwave. Take the corn of your choice and smother it in cheesy, zesty, chili sauce. It is so dreamy!

- 1 1/2 cups of corn frozen, husked and cut off the cob, or canned and drained
- 3 tbsp sour cream
- 3 tbsp mayonnaise
- 1/8 tsp chili powder
- 1/8 tsp cayenne powder
- pinch of salt for taste
- 1/4 cup parmesan or queso fresco or feta cheese
- 1/2 tbsp chopped cilantro
- 1 lime
Frozen corn - Add frozen corn to a microwave safe dish with 3 tablespoons of water. Cover and microwave on high for 2 1/2 minutes. Remove and drain the excess water.
Fresh corn - After husking and shaving off the kernels with a knife, place corn in a microwave safe mug and cover. Microwave on high for 1 minute.
Canned corn - Drain and pour canned corn into a microwave safe mug and cook on high for 1 minutes then remove from microwave.
Mix sour cream, mayonnaise, chili powder, cayenne power, salt, and queso fresco into your corn.
Sprinkle in salt, cilantro, and a squeeze of lime juice.
