Pancakes in the Microwave

Waking up on a Saturday morning to a house smelling of fresh pancakes is really hard to beat. Instead of standing over a stove with butter splattering everywhere, learn how to make fluffy pancakes in the microwave in just one minute!

Ingredients
  

  • 1 cup all purpose flour
  • 1/2 tbsp sugar
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1 tbsp butter melted
  • 3/4 cup milk
  • 1 egg
  • 1/4 tsp vanilla extract

Instructions
 

  • In a mixing bowl combine flour, baking powder, sugar, and salt. Mix together.
  • Add in melted butter, milk, egg, and vanilla extract and whisk until a batter is formed.
  • Grease a microwave safe plate with butter or cooking spray.
  • Use a spoon to place a large scoop of pancake better into the center of a microwave safe plate.
  • Microwave on high for one minute.
  • Remove and use a tester to make sure it is cooked through. Microwave in 10 second intervals until no batter is left on your tester.
  • Top with a pat of butter, drizzle with maple syrup, and enjoy!
