Strawberry Herb Vinaigrette

Muddle fresh or frozen strawberries together with your favorite flavor vinegar and fresh herbs of choice for a vinaigrette that sparkles like a springtime garden. Honey/agave amounts will vary on the sweetness of your strawberries.

Ingredients
  

  • ¼ cup mashed frozen or fresh strawberries
  • 2 tablespoons white wine vinegar
  • ½ teaspoon grainy mustard
  • 1 teaspoon honey or more to taste
  • Pinch minced fresh herbs like thyme, basil, oregano or mint
  • 2 tablespoons avocado oil
  • Sea salt and freshly ground black pepper
  • 3 tablespoons water

Instructions
 

  • Shake or whisk together the mashed strawberries, vinegar, mustard, honey, and herbs.
  • Drizzle in oil while continuing to mix.
  • Season with salt and pepper.
  • Add water and mix once more to combine.
