Pie Crust
- 2 cups almond flour
- 1 tbsp mushroom powder
- ¼ cup cacao powder
- ⅓ cup dark brown sugar
- ½ tsp sea salt
- 1 tsp pure vanilla extract
- 8 tbsp coconut oil
Chocolate Ganache Filling
- 8 oz semi sweet chocolate chips
- 1 cup full-fat coconut cream
- 1 tbsp mushroom powder
Prepare the Crust
Preheat your oven to 350°F (175°C).
In a mixing bowl, whisk together the almond flour, mushroom powder, cacao powder, dark brown sugar, and sea salt.
Add the vanilla extract and melted coconut oil, mixing until the dough is well combined.
Divide the dough evenly among four greased 4-inch tart tins, pressing it firmly into the bottom and up the sides.
Bake for 10–12 minutes, or until set.
Remove from the oven and let cool completely.
Make the Chocolate Ganache Filling
In a small saucepan, heat the coconut cream over medium heat until it just begins to simmer.
Remove from heat and pour over the chocolate chips in a heatproof bowl. Let sit for 1–2 minutes, then stir until smooth and glossy.
Stir in the mushroom powder until fully incorporated.
Assemble the Tarts
Pour the ganache evenly into the cooled tart shells, smoothing the tops with a spatula.
Allow the tarts to set in the refrigerator for at least 2 hours, or until firm.
