Ingredients

  • 1 red onion small
  • 1 head garlic
  • ½ cup fresh ginger
  • 1 lemon
  • ½ cup fresh turmeric or 2 tbsp turmeric powder
  • 2 jalapenos
  • 2 sprigs rosemary
  • 4 sprigs thyme
  • 1 tsp black pepper
  • 17 oz apple cider vinegar
  • honey to taste

Instructions

  • Finely chop the onion, garlic, ginger, turmeric, and jalapenos. Juice the lemon.
  • Place the red onion, garlic, ginger, lemon juice, turmeric, rosemary, thyme, black pepper, and jalapeno into a 1 quart jar.
  • Fill the jar with apple cider vinegar and close the jar. If it has a metal lid, use a piece of parchment paper between the lid and the jar to prevent rust.
  • Store the jar in a cool, dark place. Let the mixture infuse for at least three weeks.
  • After three weeks, strain the liquid through a fine-mesh strainer and mix in honey to taste. Store the final result in a clean jar.
