Pancakes in the Microwave
Waking up on a Saturday morning to a house smelling of fresh pancakes is really hard to beat. Instead of standing over a stove with butter splattering everywhere, learn how to make fluffy pancakes in the microwave in just one minute!
1 cup all purpose flour 1/2 tbsp sugar 1/2 tsp salt 1 tsp baking powder 1 tbsp butter melted 3/4 cup milk 1 egg 1/4 tsp vanilla extract
In a mixing bowl combine flour, baking powder, sugar, and salt. Mix together.
Add in melted butter, milk, egg, and vanilla extract and whisk until a batter is formed.
Grease a microwave safe plate with butter or cooking spray.
Use a spoon to place a large scoop of pancake better into the center of a microwave safe plate.
Microwave on high for one minute.
Remove and use a tester to make sure it is cooked through. Microwave in 10 second intervals until no batter is left on your tester.
Top with a pat of butter, drizzle with maple syrup, and enjoy!
