- Baking Powder
- Butter
- Milk
- Egg

How to Cook Pancakes in the Microwave
- In a mixing bowl combine flour, baking powder, sugar, and salt. Mix together.
- Add in melted butter, milk, egg, and vanilla extract and whisk until a batter is formed.
- Grease a microwave safe plate with butter or cooking spray.
- Use a spoon to place a large scoop of pancake better into the center of a microwave safe plate.
- Microwave on high for one minute.
- Remove and use a tester to make sure it is cooked through. Microwave in 10 second intervals until no batter is left on your tester.
- Top with a pat of butter, drizzle with maple syrup, and enjoy!

Does it have to? No, it doesn’t, but is it better if it does? Totally! Allowing your pancake batter to rest give your batter time to thicken up, which will make sure no air bubbles escape which yields the fluffiest pancakes.
Can I use this microwave pancake method from a box mix?
You sure can! The batter that comes in a box is typically thinner and has a more liquid consistency than our recipe, but that is fine. Microwave you pancakes for 45 seconds, check it, and then continue to microwave for an additional 15 seconds.

I HAVE A LARGE OLD BEAUMARK MICROWAVE WHICH COOKS MOST EVERYTHING, BUT, IT DIDN’T WORK FOR THIS.
I TRIED 4-1 MIN.INTERVALS & IT JUST BECAME LIKE A FRISBEE…I ENDED UP COOKING THE PANCAKES ON THE STOVE.
THE RECIPE IS NOT AS GOOD AS THE ONE I HAVE FOR COOKING ON THE STOVE, I’VE LEARNED.
THE EDGES DON’T GET EVENLY BROWNED & THEY TURN UP ON THE EDGES WHICH MEANS YOU NEED TO FLIP THEM OVER AND PRESS DOWN ON THEM.
I FOLLOWED THE INGREDIENTS TO THE ‘T’.
HOWEVER, I DID USE COCONUT MILK FOR MY MILK, B/C I DO NOT USE COW’S MILK & DIDN’T HAVE ANY GOAT’S MILK LEFT.
I ALSO USED COCONUT SUGAR AS I AM USING LESS AND LESS BROWN SUGAR & NEVER USE REFINED SUGAR EXCEPT POWDERED IN FROSTINGS.
I AM NOT A YOUNG PERSON & AM AN EXPERIENCED COOK OF 50 YEARS.
OBVIOUSLY I DID NOT USE A PANCAKE MIX AS I NEVER BUY PROCESSED FOODS.
