Easy Frittata in the Microwave

Frittatas are the hero of breakfast and brunch because it can typically serve a crowd and is extremely versatile! Instead of serving a crowd, this single or double serve frittata recipe is made in the microwave in just five minutes.

Ingredients
  

  • 4 eggs beaten
  • 1 tbsp of butter
  • 1 cube of cooked ham optional
  • ½ cup chopped green pepper
  • ½ cup spinach
  • cup of cheese of choice
  • Cherry tomatoes sliced
  • Salt & pepper

Instructions
 

  • Place butter in a microwave safe bowl, cover with a plate, and microwave on high for 30 seconds or until butter is melted.
  • To the butter, add in ham, green peppers, and spinach (or whatever ingredients you choose), microwave on high for 1 minute.
  • Stir in beaten eggs, salt and pepper, microwave on high for 1-2 minutes or until a knife can be inserted and removed clean.
  • Sprinkle cheese on top and microwave for an additional 15 seconds or until cheese melts.
  • Cut into slices, top with tomato slices, and enjoy!
