Whole Eggs
Butter
Cooked Ham, optional
Green Bell Peppers
Spinach
Cherry Tomatoes
Cheese, of choice

How to Cook this Easy Frittata in the Microwave
Place butter in a microwave safe bowl, cover with a plate, and microwave on high for 30 seconds or until butter is melted.
To the butter, add in ham, green peppers, and spinach (or whatever ingredients you choose), microwave on high for 1 minute.
Stir in beaten eggs, salt and pepper, microwave on high for 1-2 minutes or until a knife can be inserted and removed clean.
Sprinkle cheese on top and microwave for an additional 15 seconds or until cheese melts.
Cut into slices, top with tomato slices, and enjoy!

I tweaked my recipe, but it was good. I browned/sautéed frozen cut zucchini, 5 eggs, non cured bacon bits, with a bit of olive oil and garlic paste. I left out cheese because of health issues. I seasoned the zucchini with Italian seasoning and crushed peppers. Took way over 6 minutes to microwave due to extra egg I think!
