Fruit Salad
- 1 cup strawberries hulled and halved
- 1 cup blueberries fresh or gently thawed from frozen
- 1 cup red grapes halved
- 2 mandarins peeled and sliced
- 4 Medjool dates pitted and sliced
- ½ cup pomegranate arils
- 1 handful edible rose petals
- lime zest
Coconut Herb Sweet Dressing
- 1 tbsp coconut milk
- 1 tsp maple syrup
- juice from ½ lime
- 1 tsp mint finely chopped
- 1 tsp basil finely chopped
- 1 pinch sea salt
Prepare all your fruit for the salad and add the fruit to a serving bowl.
Whisk together the coconut milk, lime juice, maple syrup, mint, basil, and a pinch of salt.
Drizzle the dressing over the salad just before serving. Add the lime zest and rose petals over the top.
