Fried Egg with Oyster Sauce & Chili

from Simple Chinese Cooking by Kylie Kwong

4 free range eggs
2 tbls oyster sauce + 1 tbl water, mixed
pinch ground pepper
1/2 cup finely chopped scallions
1-2 chilies, finely sliced
3 tbl cooking oil

Carefully crack eggs into a bowl. Heat oil in wok on high heat until surface seems to shimmer slightly. Pour eggs into hot oil. After 1 minute, reduce heat to medium, allowing the underside of the egg to become firm and crisp. The yolks should still be runny at this point. Cook 1 more minute. Gently slide eggs off plate, trying to keep excess oil in wok. Drizzle eggs with oyster sauce. Season with pepper. Garnish with chili and scallions. Serve immediately.

…compared to this guy. Here’s the real grand-daddy of egg porn – from the movie Tampopo (thanks Nate!)

Dude. I think I’m gonna hurl.

  1. Thanks so much for posting this. I remember loving those fried eggs whenever we’d have them as part of our dinner. Yes, they do go very well over plain, white rice.

I suppose you could even have spam somewhere in there too, not the healtheist for you, though. lol

  6. Omg, that looks soooo good! I bet it would be good on top of plain white rice. Do you ever just eat a fried egg with a drizzle of soy sauce on top of white rice?

  7. You do that with oyster sauce? In Malaysia/S’pore, we do it with a drizzle of kecap manis(ABC) or sometimes dark soy sauce 🙂

  26. OK. Freaky again. I just made my basic layered omelet with fish sauce last night and ate it with rice. And then had a craving again this morning and made it again. All the while finally filming and taking pics for a lazy post. But of course, am too lazy to post it. 😉

BUT, wait just a minute… you’re eating runny eggs with chopsticks?

  41. I also was up at 3am this morning eating and I’ve been eating fried eggs all week after months of not having any (and I’m pretty sure undercooked yolks are a pregnancy no-no, oh well)… is this a phase of the moon we’re in or something? I can’t wait to try them this way- makes insomnia seem not so bad!

BTW, love the haikus and I can’t think of anyone else that could take such a beautiful picture of the remains of fabulously runny eggs.

  42. It has to be the Lee Kum Kee bottle with the woman and son in the boat with the lotus flower on the label. The premium stuff. I love this stuff, and hubby can’t wrap his taste buds around it. He’s got no problems with chili and tobasco on his eggs. I also use Sirachi sauce on my eggs. My kid is an egg purist, we leave them plain with salt only green food dye allowed. I’m gonna mess with him this weekend and inject food coloring in his hard boiled eggs. Oh wait, maybe I’ll wait until St Patrick’s day or April fool’s day.
