How to Sharpen Your Knives

um…okay, I lied. I’m not going to talk much about SHARPENING knives…but rather HONING or STEELING your knives. But I think most home cooks think that using the rod pictured above is for sharpening. Read on – I’ve interviewed Chad Ward, a knife expert and author who will show you step by step how to properly hone your knife. Plus, do you like the knife that I’m holding? There’s a nifty knife giveaway at the end of this post. Oh, and don’t hold your honing steel like a wuss in the photo above. I had to hold it like that for the photo so you could see the angle. Grip the handle tightly.

It took me 12 years of spending money on different knives before I finally found my soul mate and fell into a steady groove with the collection that I own now. In college, I got sucked into the magical world of infomercials and bought the super-duper ginsu knives that can decapitate a soda can in one swift motion and the scissors that can cut a penny in half with just the power of your pinky. Well, those lasted for 3 months and then the only way to cut a chicken breast was to stab it repeatedly with all 6 knives in my hand, Edward Scissorhands style.

As a working girl, to celebrate my becoming a useful member of society, I splurged on a expensive knife block that held like 22 different knives, each one designed to complete a specific kitchen task most efficiently. Need to carve an tomato into a butterfly? I had a blade shaped just for that task. But I hated those knives – they were too big for me and felt like I was shaking hands with a electric saw, not to mention 20 of the knives in the block went totally unused.

I finally decided to save my money and just get one good knife that felt right in my hands. It was expensive, but it was the Ferrari in my kitchen and I loved using it so much that I went around the house every day looking for things to dice. It’s been 8 years and I still grab for that same 8″ Shun chef’s knife (www.kershawknives.com.) And my latest love is a New West KnifeWorks Fusionwood Santoku (www.newwestknifeworks.com) This baby feels like a dream in my hands, it’s sturdy, balanced and the wood handle a piece of art (pictured.)

But a good quality knife is worthless in your hands if it is dull. Can you imagine force cutting through a butternut squash with a putty knife? If your blade is dull, the more work YOU have to do and greater the chance that the blade will slip and cut your precious fingers. Ouch.

I spoke with Chad Ward, author of An Edge In The Kitchen, and he taught me a few things about maintaining knives.

Every kitchen probably has that steel rod used to “sharpen” knives. But really, that rod is used for honing the edge, not sharpening it. So, the first step is to get your knives sharpened, and for most home cooks, that means once a year. Chad suggests buying a $40 sharpening tool (advice and directions are in his book), but I’d rather take my knives to a professional sharpener for $2-$4 per blade. To find a professional sharpener, ask your local chef, butcher or hairdresser where they get their knives and shears sharpened.

If you use your steel rod to hone the edge regularly, you’ll keep a safe, sharp knife in your kitchen. But most people don’t know how to use their steel rod properly and end up dulling their knives even further.

So what does steeling or honing your knife do?

Just through regular use of your knives, the edge of the blade can “roll.” While your knife may be sharp, the edge might not be pointing straight. Steeling or honing your knife will realign the edge.

The proper angle is important

According to Chad, you want about a 22.5 degree angle for non-Japanese knives, and the easiest way to get that angle is hold your knife edge flush against the steel. Now rotate your wrist inwards to get the knife perpendicular to the steel – that’s a 90 degree angle. Cut that in half, it’s 45 degrees. Cut that in half again and it’s 22.5 degrees. If you’re lucky, your steel rod will have a lip that will give you exactly 22.5 degrees (like in the photo) so you just have to line up your blade against that lip.

For japanese knives, you’ll want a 16 degree angle. Just follow the above directions to get the 22.5 degree angle and slightly rotate your wrist inward to deepen that angle. On my steel rod, the lip is oval, so one side is exactly 22.5 degrees and the other shorter end is 16 degrees. This really makes it easy to line up  my knife, whether I’m honing western knives or the Japanese knives.

How to Sharpen a Knife

Set your angle to 22.5 degrees or 16 degrees as directed above. It is important to keep the angle consistent as you stroke the edge down the steel. Lock your wrist and loosen your shoulder. Use a light touch, little more than the weight of the knife itself.

How to Sharpen a Knife

Slowly swipe the knife’s edge from heel to tip down the steeling rod by moving your forearm and keeping your shoulders relaxed. Keep your elbow and wrist locked to maintain a consistent angle throughout the stroke.

How to Sharpen a Knife

Stroke once on this side and now it’s time to switch sides. Keep the rod steady in place and move your knife to the other side of the rod.

If you’re blades are sharp, all you need is a stroke or two on each side once a week (or for heavy users, each time you use your knives) to maintain that razor sharp edge for up to a year. That’s it.

I know you’re going to ask me how to choose the best knife. I’ll be giving you mine and Chad’s recommendations based on budget levels in another column. But for now, get your knives sharpened and practice honing correctly!

Great books about knives and knife techniques

I highly recommend two books about knives and knife techniques- of course Chad Ward’s An Edge In The Kitchen is one of them, and another fabulous knife book is Knives Cooks Love by Sarah Jay. It’s beautifully photographed and comes with a handful of recipes.

Both books have color photos on specific knife techniques, like carving a TURKEY (holidays are here!), mincing garlic and onions, as well as how to cut different shapes and sizes of fruits and vegetables.

  1. Nicely written and well articulated, Jaden. The difference between honing and sharpening a knife is such a common misconception in the industry! For this reason I prefer to call it a honing rod/stick instead of a sharpening rod. Having said that, I am interested to know what honing steel you use for your knives. Do you have a preference? Also, while on the topic of honing and sharpening, I’d like to know your thoughts on what you think is a solid knife sharpener.   7. When using a steel rod that is roughened to sharpen a knife you are using a “steel”, which like a file, sheers a little of the metal off the knife’s edge.
    “Honing” is the use of a whetstone.

  76. WOW… they’re all gorgeous. Which would I choose? I guess it would have to be the Phoenix Santoku. Why you ask? Well, having never owned a really good knife in my life might explain it. I’m desperate for a knife that actually cuts, now that I’m trying to become a good cook (at the very young age of 66). Hey, it’s never too late, right?

  94. In the ideal, knives should be things of beauty, as well as utility. The Fusion line certainly qualifies. I prefer slicing with a knife to using a mandoline, and I do fairly well with my cleaver (which I keep honed by stroking against the bottom of a porcelain plate, rather than using my steels), but I’ve heard that the santuko style would work even better, although I’ve never has a chance to try one. I would love to add a peacock Fusion Santuko to my collection. I’ve a feeling that between its beauty and versitility it would rapidly become a favorite.

  134. I’m a huge fan of Shun knives, and was lucky enough to receive a Shun mini-set for my birthday from The Husband, making me a very happy (albeit dangerous) woman. Intruders beware, I sleep with those things. However, no bread knife! And since I found your site by googling for the No Knead Bread recipe, I find it fitting to be in the running for a bread knife to carve my delicious bread with.
    Both the Phoenix and Fusionwood knives are utterly gorgeous, but – should I win (and typically, I don’t win things) I choose the Fusionwood bread knife, in peacock.
    Lovely site, I’ll certainly be coming back.

  154. Beautiful knives. My main knives are a Sabatier 12-inch chef’s knife, hand made in the 1920’s and a 5-inch Japanese knife, sharpened on one side only. I don’t know the maker’s name, but I bought it in Kobe, Japan and can’t read the name. I regularly use a steel for honing and a Japanese water stone for sharpening. Both knives are great, but the 12″ is unwieldy sometimes and the 5″ a little too small for some jobs. A santoku would certainly fill in the gap.

  195. Honing or using a steel on a knife has never been a big deal to me. But actually trying to sharpen them myself at home has always given me the jitters. I’m not sure why. Maybe I feel unworthy, as if one wrong move and I’ll ruin my knife forever. Am I the only one with this phobia?

  197. Great article, I have struggled with keeping knives sharp all my life. It’s an art I can’t quite grasp. My grandfather could easily get a knife sharp enough to shave the hair on your arms. Unfortunately the gene did not pass down.
    Although, if I had that Phoenix Petty in Granite, maybe that would give me a fresh start…. 🙂

I use a 6″ chef knife for my main kitchen/cutting board knife as I find that length more convenient than the standard 8″, which is somewhat more cumbersome and unwieldly to use for quick dicing and slicing. However, there are times when I wish I had a longer knife where the added blade length would give me better leverage to slice or chop large and/or dense foods e.g., melons, beets, etc. I would choose the Phoenix Damascus Santoku knife, which is a good compromise at 7″, plus it has dimples that a regular chef knife lacks.

  308. First I need to say that I am totally embarassed to *still* be using the box of knives that were given to me by a cheap relative 15 years ago at my bridaly shower. (ugh)…then I’ll admit that I have NO clue about knives, which ones I should buy or which are the best to use either. I’m even temnpted to buy a box of Rachael Ray’s knives because hey, she can cook and she’s on t.v. so they must be good, right? Anyway…I went to the site and I must say that I think that the Phoenix Santoku is actually a really really pretty knife! The graphite is gorgeous! and now, off to Amazon, to check out the above mentioned books and to add them to my wish list for my husband to ‘surprise’ me with on Xmas!

  320. Well, nice to have not only discovered your site, from Michelle at BE, and a new read, as I miss Asian food like crazy, but also a chance to win a much needed tool and a thing of beauty. I have my sights set on the Santoku Phoenix granite or Fusionware Jessica, ever since I used a visiting chef’s knife and feel in love with it. he said he used it for everything and that sounded like a great endorsement to me.   331. Amazing knives… I can’t get over the beauty of the Fusionwood handles and the delicate swirling pattern of the Damascus steel in the Phoenix knives!

    If I had to pick just one, I think I’d have to go for one of the Phoenix knives. My husband described the Damascus steel as “the phyllo dough of steel” in the way the layers are folded and forged together! 🙂 And since we have both 8-inch and 10-inch chef’s knives already, and a nice Henckels Santoku, I think I’d go for “The 9” to fill in the gap!

  372. Fusion Chef Knife 8″ Ruby does it for me. Way back in college, my roomies and I had a party in which my Henckels chef knife was stolen. I was heartbroken and didn’t cook for a good month or so. I’m not a chef nor have I been to culinary school, but the Shun Fusion line is so beautiful. Thanks for sharing your tips. Great balance on her… only $15k… but what’s missing from my quiver is a chef’s knife with a tall blade, so my choice would be Fusionwood’s 8″ Chef in Harvest.   388. The Tahoe shoreline Bread knife would be a great addition. It really is amazing how a good quality sharpener can take a mediocre knife and turn it great. My Chef’s Choice sharpener cost twice as much as my most expensive knife, but it took an 8″ Farberware knife bought at the supermarket and turned it into a champ. Like Jaden mentions in the article, a quick run over steel is all it takes to keep it in shape.

  397. I didn’t even know these beautiful knives existed! I really need and would love the Fushionwood 6″ chef’s knife. As a person of rather short stature the height of the average kitchen counter is too high for me to have good leverage on an 8″ or 10″ chef’s knife. I have to hike up my shoulder and stand on my tip toes and still struggle and can never get a decent rocking motion going. I have never seen such a beautiful and perfectly sized knife and oooh baby, that Mountain Iris color just takes it over the top.

  456. Jaden – thanks so much for the honing lesson and the sharpening advice! I cut my thumb pretty badly when I was about 20 years old sharpening a knife, and my “hiney cringes” (PW) when anyone sharpens a knife around me! I’d rather hone and send the knife out to have it sharpened by a pro!

I can imagine the feel of it in my hand *sigh* I use myriad knives in my kitchen–well-known German blades, a 2′ long antique boning blade, even a genuine Bowie w/ wooden handle and brass rivets–and I love them all but I have been longing for a Santoku blade of this quality.

    I have my knives sharpened by a craftsman who periodically spends a day at my local Joanne Fabrics. Maybe other stores in their chain have someone similar to help your readers?

    And I could use it too, with the way I’d been mistreating my current knife – I had been honing my knife in completely the wrong way, and had to have it resharpened through grinding off almost a millimetre of the blade. Yeah, not my finest hour.

    Anyway, looking at the knives, I’m deeply covetous of “The 9” Chef’s knife from the Phoenix line. That is one gorgeous piece of steel. I’m a sucker for Damascus steel. I’m not as happy with the choice of handles, but the “granite” seems to match the knife fairly well. Too bad they don’t have hardwood handles to choose from.

  531. The santoku would fit well in my kitchen! 🙂 I don’t own any Japanese knives but would love to!

    I didn’t see anyone mention this in the comments – I sharpen my knives at home using the EdgePro system (http://www.edgeproinc.com/). It allows me to set the angle of sharpening (no more guessing at what really is 22 degrees) and comes with different grit water stones and a ceramic rod to straighten the edge. NAYY, I bought my set a few years ago and found it could restore my (German) knives back to factory sharpness, something that the Chef’s Choice sharpener never could do. A sharp knife really makes such a difference in the kitchen. I guess the EdgePro costs a lot more than sending a knife out, but I like the convenience of it, plus there’s gotta be some kind of mental health benefit from the sort of meditative groove that I get into after rhythmically sliding the stone over the blade.

And I’ve been thinking for a couple years now about moving up to grown up knives (for most cutting jobs, I end up reaching for my K-Mart steak knives) but I have wanted a chance to handle one for a period of time before committing to investing more in the style and company (I mean, sure, I’ve used friends’ and family’s fancy knives, but not long enough to bond with them). This would be perfect.

  568. Great look at knife sharpening (erm, honing) I prefer the in the air method, but I’m just more practiced at it, so the tip down method feels awkward. Maybe with a little practice.

    I’d love the phoenix petty. Can’t have too many very small sharp knives. I would have gone with the sashimi, but 12 inches seems like a whole lot of knife.

  600. Great informative post. I’m not sure I can bring myself to buy a whole book on knives, but picking up these tidbits is great. Though it’s interesting to me that I have NEVER seen a restaurant chef use this technique, rather, am accustomed to seeing them holding the steel outward or even almost upright while running the blade alongside.

    The fusionwood look pretty, but it’s the Phoenix Santuko that’s calling out to me. Have always been enamored of damascus steel blades but never owned one.

This is one knife that I haven’t gotten around to replacing since my DH decided to use mine as a pry bar & broke the tip off. Then he had the audacity to tell me that the blade was unsanitary (it was a high carbon blade that discolored over the years)! Oh well.

I use an Edgekraft SteelPro to hone my western knives and recently got a whetstone to hone my Asian knives (um… haven’t actually tried it out yet… seems a bit daunting although I’m not exactly sure why since I’d been honing my Asian knives on the bottom of my coffee mug… lol).

    Those New West Knives are so incredibly cool! I got tingles running down my spine just looking at their products! I would love ANY one of the Santokus, but since the instruction is to choose a knife, I choose the Phoenix Santoku in Stone! 🙂

  726. Without a doubt one calls out to my soul. The 9 in the stone finish from the Phoenix knife collection. While the sashimi also is amazing, I have a high-end set of Japanese knives from a top-end Japanese knife maker that I bought from Korin, so can’t cheat on them. I think if I don’t win, which I never win contests, I may buy one but I know someone just bought me a Ken Onion Shun chef’s knife as an Xmas gift. I always worry a group of Chefs will knock on my door and repo my knives as clearly their value way exceeds my skills. 😉

  772. Both the Phoenix and Fusionwood knifes are incredible works of art but and picking just one isn’t easy then they throw in the different handles like wow! I would go with a Phoenix Santoku with a granite handle due to the sheer beauty of the way the blade looks and it is a great size that would work on plenty of different tasks.

  789. Like you I have small hands ( and arthritis.) I love the paring knife in Jessica. I presently have Emeril”s and the paring is the only one I use. They just don’t feel right. Being disabled and on SS there is no way I could afford one of these. I would cross my fingers if I could. Thanks for the giveaway.

  791. Wow, what a chance. The Fusionwood Santoku would just make my day. I tend to use Global knives (I have a diamond steel and ceramic sharpening stones; I am a blade freak who sharpens all kinds of tools too darned sharp) but they run a little big for my lovely wife’s hand.

    I used to sharpen my knife every other day, but I was horrible at it and I never quite got it right. I must have damaged the blade because the knife got progressively dull over time, despite the sharpening. Now my hubby does it for me. I think the tips and pictures you posted help a ton – I might give it another try.

  806. Gosh, I’m embarrassed to say this but all my knives have been hand me downs! I still use an old chipped knife that my mother used when she was alive and cookin’ and I can’t seem to part with it. My dad gave me a knife that can slice open a soda can, funny, I somehow got used to it…what is with me? I never received any knives as wedding gifts for fear that my relationships would be severed so they were forbidden from my wish list.

    So, I would LOVE for you to pull my name out of your hat….or bowl! It was a difficult choice to make as all the knives look practical as well as beautiful and some are pure works of art but I believe the “Phoenix Santoku” with the granite handle has won me over…love the dimples! I hope to be slicing and dicing with it soon!

I’d have gone with the chef knife, but your recommendation of the Fusionwood Santoku pushed me over. A Fusionwood Santoku with a Jessica handle would be a fabulous treasure in my kitchen.

My husband has a KNIFE ADDICTION and I have more than my el cheapo knife block will hold – and none of the knives in it are the ones that came with the block. He finds them at thrift stores (expensive knives people didn’t know how to care for) and only buys the ones that are top of the line and just need some tlc.

    It’s sad. For a while he was cut off from thrift stores because I have no room for more knives – but I could make room for this one 🙂 It’s my favorite style with a pretty handle!

  825. Awesome tutorial, Jaden! I know a lot of folks to think the proper way to hone a knife on a rod is to hold the rod up and pull the blade toward them. I always wondered why they never connected the dots – pulling a knife TOWARD yourself is such a bad idea!

  835. Wow! Things I never knew about sharpening… I would LOVE that Phoenix Santoku1 I could get rid of every dinky knife I own if I had that baby. I just got a KitchenAid Mixer, and to get that knife would make me feel like such a real cook! It also looks like it’d be decent for my hands, I have smaller hands and feel awkward sometimes with big chef’s knives. But I bet the higher quality and balance would help.

  847. The chef 8 fusionwood in Peacock, please!

    I make a living as an artist (making jewelry), and was very pleased to see that New West is a small operation run by craftspeople. Many people don’t think of handmade objects as functional or for “every day” use, but there are lots of amazing artists making work that is beautiful AND useful, just like these knives. I would also recommend hand carved wooden cooking utensils (spoons, spatulas, etc)–they feel fabulous to use. My favorite is a company called “Maggie’s Farm” that’s based in Maine, but they don’t seem to have a website.

    Buying handmade work from craftspeople, instead of mass-produced stuff from abroad, is also a great way to support the local economy!

  927. Sharp knives make life better – I’ve sharpened and honed and I have what I think are a decent set of knifes and I use them all, but I’ve never had that experience you see in infomercials – you know how the knife just sinks into the tomato without any effort? Great Post!

  960. I’ve always leaned the steel’s tip against a convenient countertop and worked up and not down, but that’s just a mirror of the same technique. Also, I’m short and my counters are not.

    I will put in for the Fusionwood 8″ chef’s knife (in either Jessica or Cowboy) because a new chef’s knife is high on my wishlist. The current one (molded-plastic-handled Henckels) works well enough for upgrading to be a luxury (or a gift) and not a necessity.

  966. Maybe it’s me, but just reading about sharpening knives makes my teeth hurt. I know it is crazy but it’s as if someone is raking their fingernails down a chalkboard. Remember the scene early in Jaws? Quint has drawn a picture of a great white shark eating a fishermen. Then he slowly drags his nails across the board getting everyone’s attention..and effectively ending the meeting. Well, that’s what happens every time I sharpen my knives. I quiver in pain. OK, despite that rather dramatic imagery I would be thrilled to wrap my fingers around the Ruby handle of a Fusionwood Santoku. I promise to sharpen it…..with my iPod on….blasting Bach’s Toccata and Fugue in D Minor….at 11… “one louder” a la Nigel Tufnel

  968. The Phoenix Santoku would be my choice. And thanks for the neat post about knife sharpening. My husband does the sharpening for me (he makes a production out of it too) and I am always pleased with the results, but don’t know how to do it myself. So, I learned something!

  970. Hello Jaden, So are those fancy pants knives dishwasher safe?… Nah, I’m just yanking your chain! Wouldn’t you just faint if you saw your MIL put them in the dishwasher!
    They are quite beautiful, but I have never heard of them. Gorgeous. Good info about knife sharpening, you taught me a few tricks. x

  976. This is definitely an informative post – I did some research on sharpening knives and also discovered you won’t be able to do anything in your own home re: sharpening, but honing is important, too! After I did, I definitely noticed the difference! Great giveaway, Jaden!

  981. Thank you Michelle posting this blog post on Facebook. This is my first visit to this website and I’ve now “subscribed” to it. And I’ve been shopping for some better knives!

    Anyways….

    My wife would tell me to choose the Flamenco Fusionwood 6″ chef knive. It would be the perfect size for her petite hands and pink is her fav color. But she might hurt herself showing off the beautiful pink handle to her sisters. 🙂 So I would need to choose the Phoenix “The 9” knive with a granite colored handle. That is just one nice knive!

  1000. Thanks for the tutorial – I have had a steel rod for my knives for years and haven’t touched it. So, I cheat and use a handheld manual sharpener – the ones for dummies. I think I may be brave enough to try this, but maybe not.

    I was pretty happy with my knives until I saw these. I think I’ll be adding to my Christmas list if I don’t win. The Fusionwood Santoku in sunburst has caught my eye.

    The Fusionwood Chopper “for those who find a full-size chef’s knife unwieldy” sounds like the perfect knife for me. I have small hands and my 7 and 10-inch knives feel huge.

    I haven’t attempted the art of the sharpening steel, but you’ve totally inspired me to finally learn.

  1009. Great timing on this contest! Looks like there are a couple of New West knives for me but, for the purposes of your contest I will say the fusionwood paring knife in sunburst. Thanks for the primer on honing. We have a sharpening stone but no steel rod honer. We usually sharpen with the stone several times per year but, now I’m wondering if we should be honing instead.
