Tropical Rice makes you feel like you’re on vacation…coconut, pineapples, macadamia nuts. When I want to serve something a little fancier than just plain rice, but don’t to dirty my wok to make fried rice, this is what I make.
Tropical Rice
Ingredients
- 2 cups jasmine rice
- 1 1/4 cups chicken broth
- 1 cup good, thick coconut milk
- 1 cup crushed pineapple
- 2 tablespoons soy sauce (or Tamari on a gluten-free diet)
- 1 tablespoon sesame oil
- 1 teaspoon brown sugar
- 1/4 cup finely chopped green onion
- Optional toppings: macadamia nuts, almonds, toasted coconut flakes
Instructions
- Rinse the rice several times until the water runs clear. Drain the rice. In a medium pot, add the rice, broth and coconut milk and bring to a boil on high heat. Once boiling, immediately turn the heat to low, cover with tight fitting lid and let cook for 20 minutes. Turn off heat and do not open lid. Let sit off the heat for 10 minutes to finish steaming.
- With a fork, fluff up the rice and mix in crushed pineapples, soy sauce, brown sugar and sesame oil. Top with chopped green onion and any of the delightful toppings.
Delicious! Mixed in fresh pineapple, cashews, coconuts and cilantro. Huge hit! Served with coconut current shrimp kebabs.Â
I tried something a little different and served this with Peri-Peri Chicken!!! It was amazing! I used a tea-spoon of sesame oil.
Was just served this rice at a Hawaiian themed party. They served Tropical Island Chicken with it and it was Fantastic!

I really like what you’ve acquired here, certainly like what you are saying and the way in which you say it. You make it enjoyable and you still take care of to keep it wise. I am trying to think of what to cook with this. I am thinking pork, but does anyone have any suggestions of a sauce or seasoning rub for the pork that would go well?

The amount of sesame oil called for in this recipe is overpowering. Wasn’t the coconut/pineapple taste I was looking for.
When I was in Cartagena, Colombia, I had a rice dish that was similar to this. Upon coming back I spent years looking for a recipe comparable to it and never could find one. Well, I must say this comes pretty close; I think everyone I made this for went back for thirds; we LOVED it! Thanks for submitting this recipe!
