Some days, you’re not in the mood for complicated recipes. But that doesn’t mean you can’t make something that’s delicious and, honestly, still kind of fancy. (Your guests don’t need to know how easy this was, and our lips are sealed.) It’s our classy-meets-casual grilled peach and goat cheese flatbread. Sweet, juicy peaches kissed by the grill, and tangy goat cheese on soft flatbread, topped with fresh basil and a drizzle of balsamic glaze. It’s not trying too hard, and neither should you.

Grilling Peaches in a Pan

Ingredients:

Serves 2-3.

  • 2 small flatbreads or naan

  • 2 ripe peaches, sliced

  • 4 oz goat cheese, crumbled

  • 2 tbsp olive oil

  • 1 tsp fresh thyme leaves

  • A drizzle of balsamic glaze

  • Fresh basil for garnish

  • Salt & pepper to taste

 

Substitutes (Because Sometimes Life Throws You Curveballs):

Out of something? Relax. You’ve got options:

  • No Peaches? Nectarine or apricot work as easy replacements.

  • No Goat Cheese? Us feta, ricotta, or even a mild blue cheese instead.

  • No Flatbread? Store-bought pizza dough or pita bread should cover your bases.

 

Drizzling Olive Oil on Flatbread

Step-by-Step Instructions:

  1. Preheat grill pan to medium-high heat, and oven to 350° F. Lightly brush flatbread with olive oil on both sides.
  2. Grill the peaches for a few minutes on each side until tender grill marks appear. Remove and set aside.
  3. On each flatbread, scatter crumbled goat cheese, arrange grilled peach slices, and sprinkle with thyme. Then, season lightly with salt and black pepper.
  4. Bake for 10 minutes in the oven til the edges are slightly crispy.
  5. Remove from oven and drizzle with balsamic glaze for sweetness and tang. Top with fresh basil.

Tips for Flatbread Brilliance:

  • Don’t Overcrowd It: Less is more. We’re making flatbread, not peach pizza.

  • Use Ripe Peaches: Firm peaches are okay, but ripe ones caramelize best.

  • Watch the Oven: You want it just warm and lightly toasty.

Can I make this ahead of time?
You can grill the peaches in advance, but you’ll want to save assembly right before serving so everything comes out fresh and warm.

How do I store any leftovers?
First of all, bold of you to assume there’ll be leftovers. But if there are, store them in the fridge in an airtight container, and when it’s time, reheat briefly in the oven at 350°F.

Can I skip the grilling part?
You can. Roasting peaches in the oven also works. 400°F for 10 minutes until lightly caramelized.

What wine pairs well with this?
You’ll want to go with crisp and chilled. Sauvignon Blanc or a bubbly Prosecco hits the spot.
