Garlic Noodles Miso Butter Recipe

This is a variation of one of the most popular recipes from my cookbook (Todd & Diane posted the recipe for Garlic Butter Noodles) and SteamyKitchen.com (Garlic Scallion Noodles).

I’ve one-upped the recipe by adding in a spoonful of miso paste and throwing in fresh mushrooms, which is like upgrading from (okay, I just deleted a lame analogy of something related to stereos….too doiky, too predicable….deerrrrrr….)

Anyways, the miso paste, even just just a spoonful of it, melted into butter gives the entire dish richness (without adding meat!) I’ve created this recipe for my client, Miso & Easy, who makes ready-to-use miso paste. 

Garlic Noodles with Miso Butter

You can use any type of noodles that you want, Asian noodles or even spaghetti noodles (which is what I used). The secret ingredient is miso paste and Maggi Sauce….but soy sauce will work just as well.

 

Get your wok out (or a large saute pan with high sides) and add saute the garlic and green onions in butter, but for the love of Buddha, don’t burn the garlic – keep the heat in control!

Add in the mushrooms.

Just as the mushooms are softening, add in the miso (you might want to make a little space in the pan and stir the miso with the butter to melt it)

Maggi or soy sauce.

Cooked noodles and toss! toss! toss!

And toss more!

Garlic Noodles with Miso Butter Recipe

Use any noodles that you like - I prefer either Chinese egg noodles or thin spaghetti noodles.
Prep Time 5 minutes
Cook Time 10 minutes
Servings 4

Ingredients
  

  • 1/2 pound dry pasta or noodles of your choice
  • 2 tablespoons butter
  • 2 cloves garlic, finely minced
  • 1 stalk green onion, chopped
  • 12 ounces fresh mushrooms of your choice
  • 2 tablespoons Miso & Easy (or 1 tablespoon regular miso paste)
  • 2 teaspoon Maggi Sauce (or 1 1/2 tablespoons oyster sauce)

Instructions
 

  • Cook the pasta according to package directions. Drain and set aside.
  • Heat a wok or large saute pan over medium heat. When hot, add the butter, garlic and green onion. Cook for 1 minute or until very fragrant, making sure to keep an eye on the heat so that the garlic does not burn. Add in the mushrooms and cook for 2 minutes. Add in the miso, Maggi Sauce (or oyster sauce) and stir.
  • Add in the cooked pasta and toss well.

    OMG, this just hit the spot on the first Friday of Lent. Used your recipe as a base but went a little heavier on the garlic, Red Miso Paste and Oyster Sauce. Also added carrots and shrimp. Burping even now as I write this. Not rude burping though, but burping of thanks and contentment. Will add this to my repertoire

  2. I found this recipe earlier today on a search for “miso pasta”. I am low inventory in my fresh pantry, but I made this and it was just rockstar! So no mushrooms added (I didn’t have any), and I used oyster sauce as per the suggested substitution (thank you for substitutions on your site in general–very helpful!) I added an egg on top. Delicious, quick, and satisfying. The flavors are addictive…Thank you!!! A keeper!!!

  5. Just made this and it was delish! I used soba noodles and oyster sauce as I didn’t have maggi seasoning and miso paste as I have no idea where I would even start to look for miso & easy. I only had button mushrooms and didn’t have any spring onions but it still turned out sooooo good. I did have to add a little water as I was tossing the mixture to loosen up the noodles. Can’t wait to have the left overs for lunch tomorrow. Thanks for sharing 🙂

  7. I made this very recently, and it was very very good, flavor was excellent! I was given some homemade miso paste, which is what I used (having a difficult time finding Miso & Easy!), and I was wondering if that’s why the dish was a tad dry? *scratches head* In any case, I will continue to experiment, and boy, will I enjoy it! 😀

  8. My family was hungry and I had just bought some fresh mushrooms (Shiitake, Bunashimeji & Oyster) yesterday. Your recipe was the first to pop up in my “Japanese Mushroom Recipe” search. It is a wonderfully DELICIOUS and easy meal! I used some green tea noodles I had been wondering what to use them for, they added just a hint of extra flavor without overpowering this dish.     “Maggi’s seasoning sauce Substitutes: equal parts dark soy sauce and Worcestershire sauce (From a usenet posting by Colonel I.F.K. Philpott. See my sources.) OR Thai sweet soy sauce OR mushroom soy sauce.”

  10. I want to make this as per the recipe but I’m having a hard time finding miso paste anywhere! Any ideas? I think I’ll have to start checking specialty stores or like someone else suggested, looking online :S

  11. This is a very good recipe, very quick to prepare. My need for a hot taste give me the right to add a little hot tomato sauce and grated cheese, optional mixed with finely chopped mushrooms.

  13. Miso is great for making stirfrys. From my time in Japan I’ve learn a number of classic miso combinations.

    Try

    Mix Miso + Oyster Sauce and a little cooking wine. Then stir fry beef and green and red peppers with ginger and garlic in sesame oil. Finally add the miso combo and fry a little more. This tastes fantastic!

    And a really simple way to enjoy Miso is with ice cold slices of cucumber. Simple smear it on the cucumber and eat. Really refresing in the summer heat and a classic Japanese dish.

  14. First off, I remember Maggi seasoning! Being from the Philippines, I grew up on that stuff! And by the way, I have one too many dirty jokes from “Miso Easy”, errr, I mean “Miso & Easy”. Jokes aside, this is a nice week day emergency recipe for the kids when they are bugging! Pinning this now…

  16. Oh man, garlic anything with mushrooms means I am all on this recipe! I love how you “spiced” it up with the mushrooms. I would have honestly added crab lumps or shrimp into it. It reminds me of a recipe my older brother showed me of garlic noodles with dungeness crab. Can’t wait to try this!

  18. This pasta looks delicious, Jaden! I’ve got to find me some of that Miso & Easy. I’ve been keeping my eyes open, but havent’ seen it in my local market yet. Perhaps I will have to bite the bullet and purchase it on-line. Everything you make with it looks amazing!
