Whether you want to make a sweet quick bread to go with your morning cup or coffee or tea, or need a quick dessert, this is the perfect single serve blueberry muffin recipe. This muffin recipe comes together in just minutes and is made in the microwave for efficiency.
This blueberry muffin recipe has no egg in it because when baking in the microwave, eggs create a rubbery texture in baked goods. Although there are no eggs, this blueberry muffin is still light and airy as ever!
Why This Microwaved Blueberry Muffin Recipe Works
Minimum preparation and an easy clean up with one single dish.
This recipe serves just one person, so no need to make an entire batch of muffins (or turn on your oven)!
No eggs required, and still super fluffy.
This microwave blueberry muffin takes just a few minutes to come together.
Ingredients For Microwaved Blueberry Muffin
All Purpose Flour, gluten free 1-1 if needed
Brown Sugar
Baking Powder
Salt
Butter, dairy free alternative if needed
Milk, of choice
Fresh Blueberries
How to Cook a Blueberry Muffin in the Microwave
In your mug combine dry ingredients, flour, brown sugar, baking powder, and salt; mix until combined
Next, add butter and milk; mix until you have a smooth batter
Add in blueberries and microwave for 1-2 minutes
Sprinkle with sparkling sugar and enjoy!
No Fresh Blueberries?
If you don’t have access to or are unable to get your hands on fresh blueberries, frozen blueberries will work just fine. A couple things to keep in mind are, since they are frozen, your muffin might need an extra 10 seconds to help bring the muffins up to temperature and help the blueberries warm up and burst a little bit.
This microwave blueberry muffin is a can’t miss for your busy weeks! It’s easy to take on the go when you are running out of the door and it’s not overly sweet or heavy like your traditional bakery style blueberry muffin.
Faqs
Why did my Blueberries Sink to the Bottom of the Mug? In order to avoid this issue, there are two things you can do. You can either toss your blueberries in just a little flour to coat them or you can simply pop your mug in the microwave as soon as you add the blueberries.
My Blueberry Muffin is Lacking Flavor, What Can I Do to boost the Flavor? For a little extra flavor boost, we love using salted butter – YUM! Another delicious addition is adding a drop of vanilla extract and lemon zest.
Why did my Muffin Overflow in the Microwave? It sounds like your mug was just too small! We suggest using a larger mug to avoid overflow and a messy clean up in the microwave. Our favorite mug is this 14 oz. ceramic mug!

Best mug cake I’ve tasted. Thanks for the recipe.
Excellent quick “muffin” recipe for one I used WWflour for the healthier option, added 1/2t vanilla, and a dash of cardamom.
The recipe says to use baking powder, but the ingredients photo lists baking soda. Which is correct?
