Absolutely! Just double or triple the recipe and use a larger microwave safe bowl instead of separate mugs. Be sure to put a plate on top of your bowl so the eggs don’t fluff up and over the side of the bowl. Microwave for 2 minutes, remove and check for doneness, and continue to microwave in one minute intervals, or until the eggs have fluffed.
