I love a thick slice of pizza as much as you, but I don’t love feeling heavy and weighed down and needing to take a nap after eating. This easy tortilla pizza recipe totally fixes that problem! Make pizza in the microwave in just one minute for a quick, cheesy, satisfying lunch!

This recipe is delicious and time efficient and one that I often turn to when craving a slice of greasy pizza. Since i’m on the year of making better choices, this has quickly become a house favorite. I love that it saves me time and money, but also satisfies my intense pizza cravings. 

A small jar of pizza sauce will work great for this recipe, but if you have any type of tomato based sauce that you like, you can use that too! As for the type of cheese, I prefer a fresh mozzarella, but shredded will work just as well. Not a mozzarella fan? Use whatever you like! Don’t forget to load it up with extra vegetables for some fiber!

    • Large Flour Tortilla 
    • Marinara Sauce 
    • Mozzarella Cheese 
    • Additional ingredients you love on top of pizza! 

How to Cook This Tortilla Pizza Recipe

  1. On a microwave safe plate, lay the tortilla flat and use a spoon to scoop your desired amount of marinara sauce onto your tortilla. 
  2. Spread an even layer of the sauce over your tortilla. 
  3. If you are using fresh mozzarella, cut into thin slices and lay evenly over the pizza. If you are using shredded, sprinkle it evenly over the pizza. 
  4. Add any additional ingredients you love such as mushrooms, spinach, and olives. 
  5. Microwave on high for one minute, or until the cheese is melted.

Tips to make a Perfect Tortilla Pizza in the Microwave 

For crispy tortilla, microwave your tortilla on high for one minute without any toppings. As the tortilla begins to cool, it will crisp up, making it extra crispy after you finish melting your cheese on top. 

Add toppings! Get wild and creative and use any additional ingredients hanging out in your kitchen. Have some fresh or canned pineapple, turn it into a Hawaiian style pizza! Looking for some Mediterranean flare? Try adding a sprinkle of feta cheese with olives and roasted red peppers. If you feel you need an extra protein boost, you can top your pizza with cupped pepperoni or sausage.
