Ingredients For Easy Microwave Quesadilla Recipe

- Flour or Corn Tortillas
- Cherry Tomatoes
- Red Bell Pepper
- Corn
- Shredded Mozzarella Cheese
- Shredded Cheddar Cheese
- Pesto
How to Cook Quesadillas in the Microwave
- On a microwave safe plate, microwave both tortillas on high for 1 minutes
- While the tortillas heat up, in a small bowl mix together cheery tomatoes, bell peppers, corn and pesto and microwave for 1 minute to warm through.
- Remove the tortillas from the microwave, sprinkle cheese on one of the tortillas and layer on the vegetable mixture.
- Sprinkle on another layer of cheese, generously and place the second tortilla on top.
- Microwave on high for 30 seconds or until all of the cheese has melted.
Tips for making a Perfect Quesadilla in the Microwave
If you like a crispy tortilla, then don’t skip the first step! The tortilla will slightly crisp ip as it cools down.
But what type of tortilla? This is up to personal taste. I typically use flour tortillas because it’s what we have in the house, but corn tortillas will be fabulous as well.
You can make any mixture of filling you desire! Mix up the different vegetables and proteins based on what you already have in your kitchen. I find that mixing all of the additional ingredients in a separate bowl first works best so everything is cooked and warmed through evenly.
You can use any type of cheese you like! I love a mixture of mozzarella for the melt factor mixed with shredded cheddar cheese for a bit more of a salty bite. Pepper jack is another favorite!
Keep an eye on your quesadilla while it is cooking in the microwave so the cheese doesn’t overcook and become hardened. Microwave until your cheese is just melted for best results.
