Tried slight variation on this recipe and yielded favorable results. I happen to prefer my scrambled eggs on the creamier side. So, instead of 20 second increments I used 30 seconds as my mark.
I first oiled a bowl lightly with evoo then added 3 jumbo eggs, added a splash of evoo for flavor then seasoned them with pepper and parsley. I beat these thoroughly then put in microwave for first 30 second cook time.
I then stirred them through after first go round, then twice more until eggs were cooked as desired. Removed eggs and served on paper plate.
