Fascinating Fungiculture and Figs

These funny looking mushrooms are now a part of my Sunday suppers, as I purchase them direct from a local mushroom farm at the Farmer’s Market.

Last week, I mentioned being inspired by Fantastic Fungi documentary on Netflix (watch it if you can!) and since then, have been studying the natural health and nootropic (increasing brain performance, like memory, focus and learning) of mushrooms.

The white blob-like mass is a Lion’s Mane mushroom, which contain two special compounds that stimulate the growth of brain cells.

The Lion’s Mane mushroom even resembles a brain! The pretty dusty-pink mushroom is a Pink Oyster, which are one of the best sources of an antioxidant that may reduce cardiovascular disease and boost immunity.

The long, brown mushroom is a Pioppino Mushroom, known for its antioxidants to prevent disease and early aging.

I keep things simple in the cast iron pan.

A little garlic, a knob of butter, good salt, a squeeze of lemon, and a seasoning herb/salt blend.

Fig Apple and Gorgonzola Flatbread

As we enter the fall months all I think of is figs, apples and beautiful cheeses. The thought of bringing all of those elements into one beautiful flatbread, sounds like the perfect weeknight idea to me!

Jaden’s Weekly Tip:

Herbal Tea Hack

If you are someone who loves lemon and ginger tea, but hates having to juice lemons and grate ginger every night to enjoy it – this tip is for you!

Simply juice multiple lemons at once, zest the peel, and grate ginger to desired quantity. Combine these ingredients and pour into ice cube trays.

 

Once frozen, transfer to an airtight container and store in the freezer. When you are craving some natural lemon and ginger tea, simply put it into a tea infuser and pour hot water over!

You can get creative with the combinations!
