My husband, Scott, is a big French onion soup fan, ordering it whenever possible when we’re eating out. For me, though, the traditional French version is just a little too rich, too heavy for my tastes. All this time, I thought what Scott liked about the soup was its full-bodied, sweet beefy stock and the heady cognac. Because, that’s a foodie or a chef would say.
But, nope. I should have known better. “It’s all about the cheese, baby,” he revealed. That’s exactly why I love him. Scott’s a simple guy with simple tastes (man eat meat. grunt.) and always brings me back down from gourmet la-la land.

Growing up, my mom made French onion soup all the time. She was an awesome home cook … and still is. Lucky for me, my boys are great eaters … and this recipe is definitely something they’d love. Yummy recipe and beautiful pics to go with it.

easy one! i don use alcohol tho what can i use instead of it? what about the cheese?can i use cheddar or mozzarella?

I LOVE French onion soup… but for the “foodie” reasons you stated. Macaroni and cheese, on the other hand, that’s all about the cheese.

I love French onion soup, too, and your husband is right — it’s all about that gooey cheese! I also love the broth. I once had orgasmic French onion soup broth that was chicken stock enriched with veal bones, according to the server. Thanks for this variation, I’m looking forward to trying it!
French onion soup does not have to have cognac. It also works beautifully with an Alsace white wine (such as Gewurztraminer or Riesling) so it’s less intimidating to prepare and eat. At least, that’s how my parents always did and do it in France. 🙂
Now that I’m eating cheese again, after a couple decades without, I’ll have to give this a whirl. Such yummy photos, as always. *sigh* I really need to either get a new (read: “real”) camera, or sit down for a few hours with my P&S manual (gasp!) if I ever want to take pictures as nice as yours. I’ve heard you can get some pretty decent pics out of a P&S, but with the night-time light in my kitchen, it’s nearly impossible with the auto settings.
