  • 1 tablespoon cooking oil
  • 1/2 onion, chopped
  • 8 ounces sliced fresh mushrooms
  • 1 pound lean ground turkey
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • Freshly ground black pepper
  • ½ teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon grainy mustard
  • 1 can reduced fat, condensed cream of mushroom soup
  • ½ cup water
  • ½ cup light sour cream
  • 2 tablespoons chopped fresh parsley

How to Make this Healthy Turkey Stroganoff Recipe

  1. Cook the egg noodles according to package instructions. Drain and set aside.
  2. In a large sauté pan over medium high heat, heat the cooking oil until shimmering. Add the onion and mushrooms. Cook 3-5 minutes, until the onions are softened and the mushrooms are browned. 
  3. Add in the ground turkey and brown for about 5 minutes, constantly stirring and breaking up the meat. Add in the garlic, salt, pepper, thyme and paprika. and cook until fragrant, about 30 seconds.
  4. Add in the Worcestershire sauce, mustard, cream of mushroom soup and water. Allow to simmer, stirring occasionally, until the sauce thickens, about 3-5 minutes. 
  5. Turn off heat and stir in the sour cream. Finish with fresh parsley. Serve with noodles.

    I’ve tried a few different stroganoff recipes and this one was definitely the best. I use turkey a lot and most others aren’t as flavorful, probably because they are for beef.
    Anyways, I subbed beef stock for the water and doubled the stock, extra can of soup, and the seasonings. Family of 5 and we like it more like a creamy pasta dish. Most of the family also put cooked peas on top for more veggie.
    Saved this to make again for sure! Love.
    Only thing I wish the website had was the cooking instructions to print when you print recipe instead of just the ingredients. Maybe a glitch?
