Apparently a big shipment of fish didn’t arrive in the Bahamas, so the what did the chefs do?
They went fishing yesterday.
And caught two 45-pound mahi mahi and one 80-pound wahoo….which is our dinner tonight!

When you ain’t got no fancy smoker in the Bahamas?
You make one outta an old kitchen rack, plastic wrap and tin foil. This is the back of Chef Ted Reader, Toronto, who’s going to smokin’ some meat all day today so that tomorrow we can have Confit of Smoked Duck Leg with a crust of Smoked Pulled Pork and Fois Gras served with an Apple Brown Betty BBQ Sauce

Freshy caught fish just tastes so much better than fish that isn’t…well, so fresh! I hated fish until I went fishing with my grandfather and we barbecued the fish on the beach. 🙂

Mmm… The fish look great (and so do the cocktails @ Diane’s site). Hope you’re having an excellent time! I can’t help but be jealous when it’s completely blizzarding where I am right now.
(On a pedantic note, I looked up the gorgeous fish on the main page on Wiki, and found it’s a mahimahi. So, shouldn’t the note be- caught 1 80 lb mahi^2 and 2 45 lb wahoos? Or at least that’s what it looks like from the pictures)
