Traditionally served with sour cream and applesauce, they truly make a fab side dish. The only issue is, it’s the day after a celebration and there are so. many. leftovers. Don’t get me wrong, we love a leftover potato pancake, but sometimes we are craving something just a bit different. #1: Make an irresistible Burger using leftover Potato Pancakes as buns

The best part about these recipes is you can use up a ton of leftovers in one dish. Have leftover brisket, ham, or any ground meat? Make a burger and use those crispy yet tender leftover Potato Pancakes for the buns. Basically a glorified Hanukkah midnight snack, YUM!

Since Potato Pancakes are typically served with a variety or toppings and dips. A sour cream or creamy horseradish sauce would be an awesome addition to these Hanukkah burgers! Have a tomato and some onions hanging around? Add those to your burgers for a nice fresh and bright topping. See a burger you love without the potato pancake bun? #2: Make a Totally Customizable Breakfast Hash with Leftover Potato Pancakes  

Heating up leftover Potato Pancakes in the microwave is not an ideal plan. They become chewy and soggy and loses that crisp crunch we know and love in a hot out of the oil Latke. We love to repurpose them into an easy and customizable breakfast hash the next morning! If you have any leftover protein from the night before, add it in to your breakfast hash too! 

You could certainly add in whole Potato Pancakes but we love to rip ours up into smaller pieces first! Now, let your imagination take over! Have some leftover apples from making homemade apple sauce? Dice those up and add them to the skillet. Any rogue and sad looking veggies that need to used up asap, throw them in! Once your veggies are all sautéed, make a few well in the center of your veggie mixture and crack a couple eggs on top. Place a lid on the skillet and let eggs cook to your preferred doneness. If a recipe doesn’t specifically call for Potato Pancakes, tear them up and add them in while cooking your veggies and you can always use in place of potatoes! #3: Make a Non-Traditional Poutine with Leftover Potato Pancakes 

Typically made with french fries, cheese curds, and gravy, Poutine is the ultimate French-Canadian comfort food. We like to get a little wild and use our leftover Potato Pancakes as the base layer! Instead of cheese curds, unless you have them, we can use shredded cheese. This leftovers dish comes together in a pinch and is another awesome late night snack. You can make a quick gravy to top your poutine or leave it off.

This is such a customizable dish and that is one of the reasons we love it so much. Plus it’s like extra delicious and cozy! All of these recipes use your classic french fry as the base layer, but instead, we refry our leftover Potato Pancakes up in a skillet to get warm and crispy first and then top it with our favorite poutin toppings!
