Of all green leafy vegetables, kale is one of the most nutritious, high in vitamin K and vitamin A. In the past, kale is most popular cooked for long periods of time (similar to how you might cook collard greens), but the varieties of kale that are more tender are perfect for eating raw in salads.
After you remove the tough stem in the middle (just compost or discard), the rest of the leaf is chopped finely to add to salads. Or, if you’re lucky enough to find BABY KALE, the entire leaf is edible raw.
